New owner of a 2021 GW 307 Freedom and still don't understand the head system. Before going back to the dealer for the answer thought I'd reach out on this forum. Question is "Does the head system use fresh water for operation or does it use sea water?". Thanks in advance for response.

I’m 99% sure it is seawater. Easy way to tell: Check your seacocks. If one is labeled “Head” it is seawater. It must be open to use the head (And flush). There will most likely be another one that says “Head Discharge”. That is to pump overboard using the macerated where legal. You don’t need to open that one to use the head. Only the intake which should only say “Head”. Where they locate the sea clocks on the Freedom I do not know as I have never owned the Freedom. I do have a 306 (same hull) and the seacocks are in the CC which leads me to believe yours will be in the compartment where the head is and they will be inside a door closest to the centerline of the boat. it’ll be a rod with a small ball on top and a hanging tag that says “Head”. Pull up to open and push down to close.
If they aren’t there try under the aft seat. There is a compartment there and they could be inside that. the live well and salt water wash down are usually there but if you can’t find it in the head compartment you can take a look.

Without knowing what msd option you have, I can' tell but it should be fairly easy to tell sea water from fresh water when you flush. In addition, if you close the sea water seacocks ( close all of them for now) and no water fills the bowl when flushing, then obviously the system is raw water ( assuming the fresh water tank has water in it. You may have a VacuFlush which would usually be fresh water supplied.
That said, you don't have to go to the dealer, just call them and ask.

Thanks. As good as the manuals are, the actual function of the system is not explained in depth. Will reach out to the dealer.
Since we are on the topic... I flush the head and all of the waste water is pumped from the bowl. A day or 2 later there is what I assume is nasty water in the bowl. I'm assuming it is black water that has somehow back flowed. Why would this happen?
I didn't have this issue on the 248 with the manual pump. I just installed a new Jabsco electric unit.

Not knowing your msd type, backflow is often a sign that the joker valve (duckbill valve) needs replacement. it is a fairly easy but sometimes nasty job
I'll have to take a look, but I think that was part of the assembly I replaced. I hope it was anyway! If not, oh joy!
Sorry I didn't see your statement about just installing a new unit. In this case, the joker valve would be new, it is right next to the discharge hose port.

Sorry for the confusion. Mine is not a vacuflish. It is the manual to electric conversion. I have to look at the diagram to confirm if I replaced it.
I once owned a Chaparral 257 SSX. I had the pleasure of taking it to a pump out station on Lake Murray, SC, for a "pump-out" after a single use by one of my young daughters. That experience was enough to convince me that no one should ever use the head again-including myself. I subsequently owned two GW Freedom 275s and I never allowed anyone to use the head for anything-ever...
Waiting on my 307 to arrive from the GW plant and when I receive it the rule will be the same. I hope you get your head to function properly but I agree with Nuclear. Personally, I prefer a 5 gallon bucket. Light weight and easy to clean-or replace...

Pretty funny but I think you should work on becoming comfortable with the systems.
