How slow will it go?

Going to sea trial a potential purchase in a few days. 232 Gulfstream with twin Honda 1504S.
The guy brokering the boat doesn’t have any performance numbers. I’m curious to see how slow it can go (I lake troll for trout and salmon +|- 2mph). Current setup is a single main with kicker. Needed a trolling plate to slow down my last 4s, but on a much lighter boat.
Any experience with similar rigs?

Surprisingly, my 2003 Gulfstream with twin F200's will troll at 2.0 knots. When we fish halibut, I just use one motor, and get it down to about 1.2 knots. The autopilot doesn't like it much, but I use the motor that's opposite the wind, which I believe makes it a bit easier. I burn more fuel than if I used a kicker, but 4 hours of trolling doesn't amount to too much - maybe 8 gallons/day for salmon fishing.

I’m sure you know with twins if you want to go slow you can run one engine but leave the second in to provide drag and if that’s not enough you can drag a bucket or two behind you.
Buckets also work well to slow a drift.
