I'd definitely make sure twin 16's will fit first before anything else. I have no experience with a larger boat like yours but they might not even fit. I'd recommend the Garmin Fantom X radar as it has the MotionScope feature that shows objects in color as they move towards or away from you.

Thanks for specifying more detailed the use you make of.

As suggested, use a Garmin system as the work as supposed and are easy to use.
I suggest two separate screens,
1° for redundancy if one fail
2° as you can run 2 big screens showing Radar on one and something else (or more windows) on the other

I added 2 months ago a 8410 to my 7408 and it is for me a much better solution to run map on one screen and fish finder on the other. When I fish I use the map on the 7408 and the fish finder on the 8410 while when running home at night I use the map on the 8410 and the fish finder on the 7408.

As you don't fish and probably use the depth sounder only in shallow water then a UHD transducer would give you the best details of the bottom. Even if you don't need that it just looks awesome to see the bottom similar to a video cam.
Otherwise the GT51 is a excellent transducer for almost everything except going deeper than 3-400 ft and has side-scan what is awesome to use even for not fishing purposes as you see 100-200 ft far on both sides of your boat and that can be a safety plus navigating in unknown waters.

However, your GW dealer will know what transducer installation works best on your beautiful new boat.

Garmin 8616xsv is $6,099 each. You may be able to fit one of the new 4k displays like the 9019 at $9,899 and go single display. Don't let the dealer talk you into the older or lesser chartplotters. The 86xx or 90xx series is what you want. I would put one or two of the 90xx displays in if they fit and are in your budget.

Garmin 24" GMR24 Fantom is $2,999. Same with radar. You want a Fantom series. You could go 18" enclosed to save a little.

Transducer around $500. Get a CHIRP. You don't need side scan. Get a thru hull installed (not a transom mount).

Dealers are not allowed to discount Garmin. Any "deals" would be on the installation.

I'm using 8612xsv, 8610xsv, GMR18 Fantom, GPS24dx antenna (you may want to consider this) and GT51M-TH transducer.

If you like Garmin and find that two 16” chartplotters won’t fit your dash and decide to go with 12” machines instead, I would still give consideration to the 1243xsv. The 8612xsv does have more pixels, but the display on the 1243 is taller and wider. Diagonally, the 1243xsv is half an inch bigger. Size matters. And the 1243s are $1,100 less each.

The 1243's are a great value but the 86xx series is a better display and more pixels. Bigger on both series doesn't mean better - it only means the pixels are bigger! More pixels is better. Resolution makes a big difference when you are on a chartplotter screen. It allows you to see more of the chart for a given scale. Really helpful when cruising where you need bottom detail and want to see where you are going. Pixel counts don't matter as much on radar and sounder screens.

Look thru this thread to see the numbers. Hasn't been updated for 90xx series 4k displays but they are about 4 times the pixels of the 86xx series.

The interesting thing about the 9000 series is that all that 4k screen resolution makes split screen viewing much more practical. And the 9000 series is available in a 19", 22", 24" and 27" display (all the same resolution but bigger pixels).

With a little fiberglass work on my lower helm I think I can get a 9019 in there to replace the 8612xsv.

I really like my 86xx displays. I'm really waiting for Garmin to come up with better sounder options. At some point Garmin will have a sounder product for the smaller sport fish boats that competes with the Furuno Omni.

In Youtube is a video about the 8416 and the 9019, but in German language.
There is clearly to see the difference in screen size and resolution.
There are also several important differences like
7 x faster processor
new gigabit network to speed up data transmission

For who is willing to fork out 10K for a MFD he will get with the 9019 for 1K more a far superior and bigger MFD.
