I used to have a narrow finger to walk down, my dog fell in and all @$!@# broke loose. Wife was freaking, daughter was screaming, and the dog was swimming away from the ramp. It all ended well (he could have stood in most areas by the bulkhead) but he wouldn't go down the finger again.

If you use regular bottom paint and the coating of the drive is compromised, the copper will eat at the Aluminum. From the age I'd assume there are spots where the coating is missing so at the very least use a non copper based paint on the drive. It would take A LOT of corrosion for the drive...
Being honest, the hard paint didn't do much for you. Yes it will have less drag but barnacles you got using it will have more drag than the ablative paint ever will. The marinas will push non-ablative paint so they have a customer every year plus for guys who don't care about costs, the hard...
Why do you want the fridge? Unless you plan on extended stays would't a cooler be a better choice? I also have a '91, I'm thinking of adding a microwave (and a 12V coffee maker). Coolers will last all weekend but I miss a hot meal in the Fall.
Check ALL the fuel filters (there's a lot of them) then if you have priming bulbs, be sure it's not collapsed then see if you can squeeze it and see what happens to the power. If the power comes back, the low pressure pumps are going.
That part that scares me is insurance claim. Would it be a salvage title? Insurance companies don't like to loose money, if they want to total it something is up.
Run away.
Unless you want the hardtop (not piping just the top), cushions, seats, bowrail, cabin doors,... small things. You just can't tell how much damage was done and could be a never-ending nightmare.
The SWSII motors are strong and reliable their only downside is a little less fuel economy at cruise (but thirsty when trolling) and getting them going on a cold November day. Once they get warm they always start right up.
Get the older hull and the OX's if it passes the inspection, the 225's are not worth the 30K extra. At idle the 225 is basically silent but when running there isn't much of a sound difference.
Not to bust you chops but did you select the main tank? There could be corrosion by the sender connection but they do go bad.
For the trim there is a little lever under the motor that sends the trim angle to the gauge, they often get stuck. Spray some lube on it and work it loose.
The 28 or 30 (same hull with full running surface) always had SV2. OX's are good motors but given the choice of low hour F250's the F's will win every time plus 1 powerhead costs more than AC/heat and a companion seat.
Rule #1 keep the wife happy.
Rule #2 get a survey.
I'd be worried about the hours on the OX's, the F's will give you better mileage and you can see how many hours are on them.
When I did mine i used 36 grit, go as course as you can find. Pneumatic DA sanders use quite a bit of air, there are grinders with a dust collection system but they aren't cheap.
Pump the gas through the water separating fuel filter into 5G containers. If you don't want to use it in a car, any landscaper will gladly take it off your hands.
