Gonna be tough to get the power you want with the weight you need. Guessing the engines you have are in the 280# range. The rating was back in the day, is the transom in that condition? I like the single screw and kicker unless you can locate a set of older 2-stroke motors.

True, but it does give options having identical banks. I've owned a 2 batter, 2 bank set up in a GW since 2001 and never had a problem.

The rigging tubes should be easily located if you have the rear deck up. Shouldn't need to take up the deck near the helm up. They appear to be pvc and run from the aft to the kick panel in the helm area starboard side.

IDK. In the northeast the groups struggle for sure to keep interest. Most of the dealers are not really doing much either. I think the focus is sell a few boats every year to make a nice chunk of change and do the service and storage activities. May be better in retirement areas were people...

As soon as I put something like that in, I'd be looking for something larger and more comfortable. Can't likely have space in the helm and the comfort of space. I'd get a bigger boat!

Too funny. I'm getting old and cranky... I don't relate to people that buy a 28 foot or less boat and expect it to ride like a 50 footer.

I assume they have both an ac and dc input. There may not be a ac line to the fridge (GW was 12v only. Need to either tap the 120v stove or run a line. The 12V systems run off the batteries that are charged when the boat is connected to shore power.

Change deck plates to screw in models and seal well when installing. Anchor rode will allow water into the bilge, Hardtop stanchions and cup holders that drain into the bilge are other things to look at. The cockpit scuppers drain to thru holes aft sides. You may have dry rot on the hoses or...

Likely gonna be doing some mousing on the replacement. The units seem to change configuration every few years and GW probably shoe horned it in there.. Likely hard to find a direct replacement. Let us know how you make out.
