The whole line of Smoove products is top-notch. With your boat being relatively new, Bubble Gum was probably plenty aggressive to make it shine. Pro-Cut is great if you have a bit more oxidation

We recently did a Rhodan 84" on one of those. Mounted it along the port side. Only had to move the anchor safety chain from port to starboard. The windlass wasn't in the way. Customer went with a single Dakota Lithium 36V 60AH DEEP CYCLE LIFEPO4. Feel free to hit me up for details...

We've been using Dakotas, and our customers are happy with them. Worst thing, in my opinion, is to go for the cheapest you can find. You want a strong brand behind you.

It can be done. Sea Swivel makes a nice mount adapter. You might be able to get by without it. Have a look at Minn Kota, Garmin Kraken, etc. We install them all the time
There are several options for remote mic VHF radios. That'll free up some space for you. As mentioned, you can glass over the console for a new, clean look. We do acrylic panels. They come out looking really nice. Or you can DIY with starboard
