1997 272 Sailfish with 250 Verados

Currently have a 1997 272 Sailfish (euro transom design) with 1997 Yamaha 225 OX66's on the back. Both engines have been reliable with little problems throughout their years. I have an opportunity to get me hands on a clean pair of 2008 250 Mercury Verado's with approx 1000 hours on them. Does anyone have any experience with this setup? Would it be too heavy? Any performance/fuel numbers?
 
What's the weight difference between the engines?

The number of hours wouldn't bother me - maintenance history and engine health is key.
 
Your hull is rated at 450 hp max. You may run into insurance issues due to over powering. The 250s will add extra strain on the transom.
The weight difference will be significant. The Verrado 250 weighs about 168 pounds more per engine. That's 336 extra pounds on the transom
 
The stepped transom provides less buoyancy. I have a 99 islander. It’s stepped. Is the 97 sailfish stepped? I would be very aware of the weight increase
 
Appreciate the response, I too am also concerned about the added weight. EfX, yes the 97 Sailfish is also a stepped transom.
