I just purchased a 2019 Canyon 306 which has the fold away seat backs for the fish boxes in the bow area. I assumed that they would be easily removable since I'll only need them about half the time and would like to keep them out of the weather. Unfortunately, that doesn't seem to be true. Do they have to be mechanically unfasted for removal? Are they designed to be permanently secured to the boat?

Not for nothing, but that seems like an excellent question for your dealer? There's always the possibility that the design has changed for 2019 and, if my memory is working, I don't think there's an active member here with a brand new Canyon. Or, maybe there is mention of it in your manual?
Short of that, post some pics of the seat - and look underneath in any access panels, too.
