How much should installation cost for a Garmin 7610xsv w/transducer on a Sailfish 28, I am getting a wide range of prices.

Labor prices can vary quite a lot. Experience (being more efficient) can vary, too. Type of transducer can affect time, too. Access to the areas they need (other stuff in the way, excessively dirty) is another factor. On average, somewhere between 2 and 4 hours is probably a safe guesstimate.
Do it yourself! It is cake. I did the same unit on my 272 last year. I even flush mounted it with help from this forum.
Quality is remembered long after price is forgotten.
2 to 4 hours?? I spent 8 hours loading the truck with gear, driving to an from the last job just fitting the Garmin to the dash then ordering and making the custom starboard dash plate. How you quoted 2-4 hours with the info he gave is an injustice. If he wants transducer and power cables run up a hardtop.....that takes a lot of time.
He's located in Hampton's Bay NY, that means huge labor rates!

How do I quote 2-4 hours? Easy. Done it many times. The more you do it, the more efficient you get. Obviously if there are extenuating circumstances or the customer wants something done over-and-above the standard gimbal bracket mount, then things change. But if he brings the boat to the installing marina, which is SOP, then that 2-4 hours should be pretty accurate for a typical install. It's really not that hard, nor does it take all that long. It's pretty basic, actually.

You will unfortunately get a wide range of pricing. Some potential drivers: Quality of work, travel distance, experience level and specifics of the job (how difficult to pull wiring, flush mount or stationary mount, location of display and transducer (access, ease of install). That being factored, there is the need factor - do they want/need the work. If loaded up, some will toss a big number - if you bite, they take it because it's a big pay day. If not, they will let you walk.
I usually buy my stuff and have the dealer install. I negotiated this as part of the deal at the end after we settled on the boat. I've never done it post sale and I know I got a very good price.
I'm going to go out on a limb on this one. I'd say 25% of the equipment cost (assuming a sufficient amount of stuff like radio, plotter(s), ducer, radar etc. Maybe for a small job it is 35-40%.
