I tried to lube the zirc fittings all around my engine. The grease went in some of them, and didn't go in others. Is this a problem of zirc fittings going bad, stiff grease from the cold, or some other issue?

Could be bad fittings or a clogged up bearing/sleeve/etc).
The only sure way to check the zerk fitting is to replace it with a good one. There is a chance of the old fitting breaking off so I try to avoid that option. Unfortunately it is also often a major task to check the bearing surfaces in most cases.
You might try to check if the zerk check ball in the center of the fitting moves when pressed with a small flat round tool. A small allen wrench shaft will work. It can be lightly tapped to free it up sometimes.
Make sure that you grease gun seats firmly. It should get a good grab on the fitting. If the gun comes off easily, it wasn't on correctly.
