I guess it depends on how slowly you need to go, not how fast.

My speed should be from 1.5 mph to 2.5 mph

Should be able to.. Run one forward a d one in reverse to get your speed.. Not sure how economical fuel wise that is. But should work I'm thinking

I usually alternate engines. Shut one down, troll with other. Rinse and repeat with other next time or later in the day.

I have a 98 272 Sailfish with the 225hp OX66 2 strokes and I can troll nicely with both around 2-4 kts with no problem.
