Looks like this guy did. Not sure what year your boat is or if it has the enclosed transom or not but the max horsepower for a 1992 GW 25' Sailfish is 400hp. Not sure how a motor with 100hp less than the max would handle but I'm sure it's been done more than once before.

Not repowered but rather 'powered'. Grady offered a single diesel i/o version of the Sailfish. Great boat but maintenance was costly.
I did. 300 Evinrude G2 on 25 Sailfish open transom. Cruise at 4600 rpm . 1.8 mpg . 13/14 gph at 24 /25 knots.
