Mine is the large windline, 23" by 4" wide mounted on starboard with a 3/16" steel plate for backing. Mine had the lifting ring cleat combo which I kept by cutting a 1 1/8" hole through the windline, what a pita.
When I see a boat with twins advertised with one rebuilt powerhead my first thought is who did the work, how long will it last and what did the current owner do wrong to blow up a yamaha. My next thought is, how long before the other motor goes. No offense meant, just how I think.

My issue was similar to yours in that it only happened after the engine was run for a while. I have no idea why that was the case. Hopefully someone else can help you out.

Ended up being misadjusted throttle cable. The sync and link on that motor needs to be about perfect so I would get the factory shop manual and take the time to do it myself.

Yes, WOT is an important data point. Outboards need to be able to hit their max rpm, in your case, 6000, with a clean bottom and normal load.
If yours cannot, or dramatically exceeds the 6k redline, you will need to look at the prop size.
If they are hooked up they show the water pressure of your outboards.

Having replaced 3 aluminum tanks over the years I am a plastic tank convert. I would consider taking a look at them.

Last boat had twins and when the helm and rams needed seals I took everything apart and took the seals to a hydraulic repair shop.
For around 20 bucks I replaced all the seals in the helm and 2 rams. Then bought a gallon of aero shell and serviced the entire system way cheaper than seastar parts.
I had twin hpdi's on my last boat and I got the Yamaha diagnostic program and cable and the factory service manual. Had an old laptop with the program loaded on it.
I do my own maintenance and highly recommend getting the factory stuff.
I would drain the fuel tank and run that old fuel through my mower.
