I have Evo2 12 inch displays on my 2017 330 EX. Looking to upgrade to EVO3S. Can I fit two 16 inch screens? Or maaybe just replace one 12 inch with a 16 inch? How would that look? Thoughts?

There might be adequate width for two 16" MFD's, certainly for one, but I think the 16" would be too tall. You might be able to off center the screen downward to fit, but the bottom of the MFD might hit wiring etc underneath?

Simrad says they are 15-3/4" wide by 10-1/4" tall. The height may not be a problem. I will measure next time I am on the boat.

OK, not on my 2006 GW 330 Express today, but I found my two 10" Furuno MFD covers in storage. These covers measure 9-1/2" by 14-3/4". The EVO3S-16 is reportedly 10-1/4" by 15-3/4". I still have some FG showing around all sides of the MFDs. Guessing the 2017 330 Express electronics hatch hasn't shrunk, I think two Simrad Evo3s16"s might actually fit. You may need to customize a new panel and cut more of the existing panel away.

Actuallly the width is 17.2 by 10.2 so not sure it can fit. I have seen pictures of Garmin displays 8616...but they have no controls on the side...only touch screen,

You can download the Garmin mounting templates and make a test on the electronics dshboard, thats what i usually do in such cases; to cut a sheet of cardboard to size and bring it to the boat to make sure the shape fit.
I saw several Bimini/Canyon what have similar/same size electronics panel and they had twin 8412 and the autopilot and yamaha gauge between them. That looked clean and nice but only 12", from what is saw on the 330 Express i guess that they will not fit without modifications on the panel.
Even if the 8416 would fit, consder that you need enough space around them to screw the 8416 down on the panel and basically you would have to cut the whole front of the instrumen panel to make them fit, leaving only a small strip between them for stability.

I personally see no particular benefit of 16" mfd's, 12" is just fine as distance from seat to the mfd's is not very far.

Garmins fit...I have seen a 330 Express with 8616. Question is do the Simrads fit as they are wider with additional buttons on the side, Garmins being all touch screen no buttons.

I took some fairly precise measurements on my 2003 when I updated the electronics. May be helpful!

Well that settles it. at 17 inches wide two Simrad 16s wont fit. However Garmin 8616 measures in at 14.75 wide x 9 3/16 tall so its fits two across.
