Anyone out there with a 2021 Freedom 215 with a f200 Yamaha? My bottom is painted. Just wondering what max speed and RPM you are seeing ? Trimmed up calm water i'm see 37 mph and 5500 rpm. Thought it was a little low! Any thoughts would be appreciated. Prop is stock

Are you trimming up until speed no longer increases or "just before" ventilation?
What type of load in the boat during those runs?

Painted, but just came out of maintenance. They pressure washed and cleaned bottom.

For now, assuming "yes"...
-- Double check and report back as to the prop... size/pitch/make.

If everything else is good... the things I asked about (it sounds like they might be)... the height of the engine is really the only variable left. You need to get more RPM somehow and raising the engine might be the best way. If you're positive on all of the other stuff, then contact your dealer - they should be able to fix that for you at no cost.

Is your motor a 4 or a 6 cyl model? I would guess it is an I4.
In that case the WOT range is 500 to 6000 revs. So your WOT figure is in the range. I would guess that your 6100 rev data refers to the rev limiter number.

How did you measure the top end speed? Did you try two passes in opposite directions to account for currents an/or wind?

Grady-White has performance bulletin data on their website for you to compare. It will give you the stock prop size if you have the stock engine. You should be close to these numbers, but bottom paint can make a significant difference. Click on Performance and then "performance data" to get the RPM/Speed chart.

Per the website, it says that combination will achieve a maximum speed of 42.6 mph @ 6,000 rpm with a 14 1/2 x 15 Reliance SDS prop on it. To be fair though, I'm sure that those numbers are in perfect or better than ideal conditions with as little fuel and added weight on the boat possible to get the best numbers they can. In the real world, I'm sure that your numbers are likely pretty common as long as you don't have the boat loaded down like crazy.

I was running it with full fuel and just me in the boat. Very little gear. 10 gallons of water.

Actually did do multiple passes and achieved same numbers both ways.

How were the conditions when you made these passes? As I mentioned above, I'm sure the numbers on the GW website are in perfect or ideal conditions and with very little fuel or extra weight on board. Your boat per the GW website says that you have an 80 gallon fuel tank, of which a gallon of gasoline weighs around 6 lbs per gallon, which would be approximately 480 lbs. If they did the tests for the website with only say 10 gallons of fuel on the test boat then that would only be about 60 lbs comparatively, or about 420 lbs less. At which point, I wouldn't be surprised to see them get higher rpm as well as mph numbers. I'd do a comparison, next time you're running low on fuel and have say only 10-20 gallons of fuel on board, then take the boat for a test drive and see what kind of max performance numbers you're getting, as well as maybe empty out the 10 gallons of water. As a gallon of fresh water weighs 8.33 lbs per gallon, which will add 83.3 lbs to the equation as well.
OK, that helps, Joe - thanks for the extra info. You're quite a bit off from your max RPM and with the light load you had you should be able to get a whole lot closer than you are, if not right at 6,100. Either something is wrong with the engine (highly unlikely given you don't seem to have running problems) or you're not trimming up as far as you should or it's the mounting height.
First, try trimming up higher until the prop ventilates and then back down and then trim up again until just before that point.
FYI, I had asked about the "hole" but I don't personally know what hole is correct. I asked that only as it's another variable and one that is good for you to know about to be able to compare to others with similar rigs. You may want to call your dealer and ask them about the hole.
Unless it's a really sloppy/uneven bottom paint job. BP will have a small impact on top end, but even a "decent" job won't cause that much RPM drop.

Actually going out today again. Will try this and Grady Tech Rep has me doing deck angles at 2000 4000 and 5000. Said he can compare them to their in house numbers!.

Were you able to confirm engine height with him?
Yes it is in second hole from top . He said that is where it should be . He also said the deck angles will let him know if the bottom paint is dragging the bow down. Will let you know how it turns out.
Shoot - I was hoping the engine was in the wrong hole as that's an easy fix. Well, if you have the capabilities to lift it, anyways.
Does he have you trimming the engine to a certain spot during those tests? Reason being, adjusting the engine trim has a dramatic impact on the boats pitch/angle.
