My sliding door latch to the head catches but pops open when under way and when we hit waves. Anyone have this issue and how to adjust the lock? I have tried tightening and loosening the two screws that hold the fixed plate the lock catches onto but no luck.

You have to determine if the issue is an alignment issue or a bad latch,
If you close and lock the latch, does the door vibrate loose? If it does, check the latch at the 'catch' end to see if the lock itself can be pushed open. I have had (and doo have) latches that originally had internal springs to maintain pressure on the locking lever, where the spring died and the latch would vibrate open.
