On my 2020 228 the dash is polished fiberglass (I think), very slick, and anything I put up there falls off. I sort of get why they didn't put a lip there, the swing down door cover would fight it when you open it. So has anyone figured out an answer?

Maybe a tool box rubber liner cut to size?
2nd idea is to use the heavy white rubber ESD mat that is used for electronics benchtops to protect circuit boards during assembly/disassembly and rework. You'd have to get the material, but it is 1/4" thick, very stable and durable. I used it for pulling lobster pots over the gunnel to protect the hull.

I second the SeaDek caddy. I made one out of leftover seadek (regular and helm pad) and attached it to the bottom of the door cover.

There’s a company called Deep Blue Marine that makes a variety of organizers with suction cups on them that work well for stuff like wallets, keys, phones and drink holders. High quality and hold up well. I have two of these currently for the junk in my pockets.
