That is a cavernous area, below the deck. Has anyone turned that space into a fish box? Ideally there would be a premade, drop in fish box available to purchase.

The problem with a fish box there, is if you use gravity to drain it, it has to go in the bilge. That's a disaster. The other option is a macerator pump. It never gets it all, so you always have cleanup and stink. Macerators are troublesome. That space though, is very useful as storage.
I am thinking it would have a sealed bottom, and use a portable pump to empty it. I would not need it for salmon, but for tuna fishing it could be handy.
It is a massive area that should have been used by GW for some purpose other than an aux tank. With 4 strokes, the 248/258 had plenty of range on the main.
The challenges you will have is how to execute the installation while keeping it convenient to use and water tight. If you have a lot of experience reworking fiberglass, it shouldn't be a terribly challenging project. Unfortunately, I'm not that guy!
