Yesterday I removed my original s200 Yamaha's and rigging, I decided to install a single 350 Mercury verado. I will keep updates on the performance and fuel economy.
I haven't seen a single engine sailfish and figured I could give it a shot. I'm thinking it will be within 2 mph.

interesting choice. I would have gone with twins but interested to hear how it performs. im thinking you will miss the traction of two props, maneuverability etc

Keep us posted. I recently purchased a 1995 26' Islander and am considering doing the same. I don't fish offshore much. I hadn't thought about the traction of two props......
 
Sounds good, Im getting all the rigging supplies this week and will take some pictures. 6 years ago I removed two old two strokes from a gulf stream and installed a single f250 and was very happy. Im in the industry so I have easy access to everything
 
controls, harness and switches are in. Helm, lines and displays are going in soon networked into my Simrad system with pilot.

After several prop swaps I found the right one. this combo runs great, more top end and much better fuel economy. Im also very excited how fast it comes out of the hole! overall a very positive re power.

45 mph @ 6100 rpm, 2.3 mpg @ 30 mph nextgen controls with auto trim, cruise control and trolling mode.

those numbers arent too bad. im running about 2.4 at 30 and top out at 52 with my twin 250s.

i guess you saved a lot on install though, probably almost 10 years worth of fuel, haha. it definitely doesnt sit low in the water with the single. its nice to see a grady of that vintage with the deck drain through hulls clear of the waterline. i bet it rides nice and level too
 
what prop did you end up running? those are pretty good MPG #'s. I get 1.7mpg with 17" inertia ecos with twin 250 verados
 
Good performance and the motor looks great on the transom. Nice helm as well!
 
Wow this looks great! I’m doing a very similar repower with a 350 verado on a 25 sailfish. I have a notched transom though. Is yours the XL or XXL? Are you using the mercury power steering? I have the same helm and I think I’m going to put a simrad 12” unit where you put the vessel view. You have made me feel better already because every other from says I’m crazy going from the old twins to a single.
