Greetings all- I'm a new owner of an 86 overnighter 204c. Looking to do away with the existing simple Bimini cover and get a new Bimini that will allow me to put full canvas enclosure down to the snaps on the windshield and all the way around the cockpit. Any recommendations on good companies online that provide these?

Yeah, for this one your best bet is going to be to to a local shop and have it made. Plus, there's no way to know if the existing bimini is original - which means IF there is original full enclosures out there, it may not fit.
Besides, this gives you the opportunity to have it made the way YOU want.
