Wondering if anyone knows of a good way to cover the entire dash rather than just relying on the various electronic device covers?

Any number of ways you can do this. Anything from a towel to a piece of canvas you make fit custom. Snaps, velcro... all can be used to secure it in place if needed. If you're keeping the enclosures up, it might stay just fine on it's own. You could make a hem and fill the hem at the top and about half way down each side with popcorn kernels for weight and that should keep it there all by itself. Lead shot is another option.

I had my 282 Sailfish for over 15 years, and when in the slip, always had a white terrycloth towel covering the helm. On my new to me Freedom, I have a Sunbrella blue helm cover with snaps. Good idea to keep it covered. My Sailfish helm still looked new, after all those years..
