Great site!! I just picked up a 1997 272 Sailfish with S225 TXRV's EFI (370 hrs) which I launched on Saturday. All went well with the inagural run. My first Grady was a 94 Adventurer with a 150 TXRS which I had for 6 problem free seasons. A few of many questions I hope can be answered. What can I expect for performance from this current set up. Initially without experimenting too much only trimming the motors I was seeing 18-21 gph, 3700-4100 rpm at 26-29 mph. Is this in the ball park or can I do better? What can I do to ensure years of trouble free service from the motors and is there a a high limit as far as hours go where these engines loose reliability? Lastly for now, with the ignition on I could hear a clicking sound about every 3 seconds which seemed to be coming from the engine hour meters. They are analog meters so I wasn't too concerned. That GPH sounds about right. Also the clicking is from the analog hour meters. Nothing to be concerned with. They do that right out of the box. Nice boat and congratulations.
 
The Salfish is a lot more boat than the Adventurer, fuel wise as well.

Sweet spot is about 4K rpm as it is for most all.

If you troll often, on good seas/wind days, you can do just fine on one motor.
 
Whats your max RPM? I have a 1998 Sailfish with twin 225's and I get much better speed than you report. At 3600 I'm at 32 mph, maybe a little quicker at about 1.5 mpg. At 4100 I'm at 38 mph. Perhaps your are propped with too shallow a pitch. I'll be out this weekend and verify rpm/mph/mpg and report back.

Sounds like you may be overpropped.
