Oldest a used Grady can be while not having to worry about fuel tank/tanks replacement.

There's really no answer to this. It all depends on where the boat was used, how it was cared for, how/where it was stored, how good the maintenance has been on the floor hatch and such.
The ONLY way to know is to inspect it, which is pretty easy.

I had a 99 192 until 2025 with the original plastic tank. Never had any issues. I did replace all the fuel hoses around 2018-2019, but the tank was still going strong when it sold last year.
FYI, I made an assumption that the OP was referring to an aluminum tank... But, Gulf, you're right - he didn't say what he has. Plastic is of less concern and Al.

You're chasing the Santa Clause dream of GW ownership and for that matter any 20+ year old boat! Truth is they are all sinking...only difference is how fast! They need TLC and $$$.
For my 1997 268 Islander I did fuel tanks a couple of years ago. Just finished a transom last week. Refinished hardtop and tower. Boat is like new!

For me once it's 20 years old brand new tank/tanks epoxy coated. New hoses new hose clamps and the smallest most over looked and very very important is the gasket on the cap. I read about that one in a magazine !
