I have a 2014 307 Freedom and I’m wanting to replace plumbing fixture on the small sink on deck. There is a pull out trash can under , and that looks like how you would get to underside of dock , but before I started pulling out slide and enclosure I was wondering if anyone had done this?

I haven't done it on your model, but have done it on plenty of boats over the years. You shouldn't really be in for any real surprises (other than sometimes tight access... but hey, it's a boat... that kinda goes with the territory!). In the end, it's just basic plumbing.

T4, thank you … yeah I figure the plumbing part will be basic , just not sure it that slide out trash can drawer is the best way to get under sink to change out

Most of those drawers that slide out have a latch on the back top of the drawer that retains it and keeps it from coming all the way out. You can just rotate the latch down and the drawer will come all the way out and you will them have access behind it.
