I recently bought a 2001 233 Gulfstream, during the sea trial with a 2003 225 Yamaha 4 stroke max speed was 30 at 5,800 rpm. Does anyone have the same setup ? Looking to buy a new prop, 15 pitch. Think it will make a difference ?

It would help to describe the current prop, diameter and pitch.
That said, your wot revs are in the desired range. If you know the pitch, the percent slip can be calculated to see if you need more bite. It is also possible that the current config is correct but the prop is beat up.
For the record, hoe did you measure speed?

Since you are already near wot rpm, unless the prop is damaged I’d think that a new wheel is not gonna make a big difference. 232 is a heavy boat for a single 225. Consider calling Ken at Prop Gods for suggestions that might optimize for specific metrics - hole shot, low speed plane, midrange efficiency, stern lift, wot rpm, max speed, etc.
