Replacing cables on Johnson 175 Oceanrunner

Have a 1997 175 Johnson Oceanrunner that I need to replace the throttle and shift cables. Can someone explain how to disconnect these cables from the motor? They are down low and I'm not sure how to best detach them and how they should be clamped in ( what part of the cable should be in the metal clamp).
