While my boat is high and dry, I'm looking to add some underwater lights. I want to make sure I do it right and that the lights will last a long time. Any suggestions? Should I add two on stern and two under the hull? Drilling through the hull makes me a bit nervous so I plan to let the professionals do the work.

Just 3 on the transom is fine. As far as brands they are so many out there to choose from but the best way to go is LED lights.
If you go with surface mount and exposed wire you don't have to screw anything on the transom, just 5200 it.
Go on THT there are entire threads on underwater lights. There is also a guy on there that everyone's orders lights thru his name is Chris and as soon as you pull up an LED thread or underwater thread you will see him. Good luck
Abve pictures are Chris' first generation lights i had on a skiff. Those are from 2008 and they still on the boat mounted only by 5200.
They look "ugly" but they are simple and very bright.

I guess I would drill the hole as you need to stake the wire with a screw anyway. Maybe you could make a U channel out of starboard or somthing and encase the cable to protect it? I still would look for a spot where there isn't any wood. Maybe in the transducer area if not being used? I have heard too many stories of rotted transoms and even with the no-rot plywood, I'd still like to stay clear of any additional holes.

You don't even have to install the wire with a screw, just duct tape it in place in a few spots and then run a thin bid of 5200 on each side of the wire in 3-4 places, that will stay there for ever. I did it like that on the skiff because it has coosa transom and it was above water line. I had done it with just 5200 on a V20 i had, i'll try to find pictures for you.
