Would any members have or know where to get Performance Data for a 1999 180 Sportsman paired with a 2000 Yamaha 100hp 4-stroke carburated model outboard? I haven't found anything on Yamaha's or Grady's archives. Any help would be appreciated.

It probably is a 24-26 mph cruise and a 33-34 mph top end.
There weren't many sold with this setup...a few 115s, some 130s, mostly 150s. My 150 tops out in the mid-40s, cruises comfortably at 32-33 or so.
