We actually get a lot of use from the freshwater tank. Fishing 50 miles offshore with 100 degrees, it is nice to go down in the cabin, clean the salt and oils off glasses and sunglasses, rinse face/dowse head and towel dry. Now feel like 100% again! 
We also use it to rinse off all the reels and tackle to get the salt off before heading back inshore and store them down in the cabin. We use the sink and some anti bacterial soap to clean the bait off hands before eating lunch. The girls would not be happy without it!
To restore the tank, I use a shock does of bleach in the tank, fill with water and let it sit 24 hours. About a cup in the 30 gallons will kill any bacteria and help to clean the tank. Then I run all the faucets and cockpit hose until empty. I refill with water and empty again. Then when I refill, I use 1oz bleach to the 30 gallons water to keep it fresh and bacteria free. If emergency, one could drink it, but we don't. When winterizing, I empty the tank and add 1 gallon antifreeze and run each faucet until the pink shows up and wait for spring and do the tank restore procedure again.
