I think the additives guard against phase separation. My understanding is the ethanol causes the plastic to swell. I never had any problems until my marina went through a time period where they could not get ethanol free gas.

If you don't have the new design and need to change that filter, you can take off the whole assembly, put it in the freezer for a couple of hours and the filter cover should screw right off. Ethanol, who needs it?

Best I recall, 4600 rpms gave you 26 mph at about 1.0 - 1.2 mpg give or take. What the 225s had that the 250s do not, was a sweet spot that gave you 20 mph and 16 gph. Granted that's not flying, but on a long waterway trip it's fast enough and pretty economical.

I had a225s on mine and repowered with the 250s. The 250s might be a hair faster and burn a bit more fuel. If the 225s are in good shape, I think you will love them on that boat.

Depending on what gauges you have you may be able to change the display to get a look at your actual engine temp. That way you would know if it was actually getting warm or a faulty sensor, etc.

You can also buy some treatment at West Marine. If water sits too long especially in a water heater the chlorine breaks down and it stagnates. Every so often, I open everything up and flush the system with the hose overflowing the fresh water fill.
